Instructions
Take bread and hollow out top and bottom.
Brush insides of the top and bottom of the bread with olive oil.
Take ½ of the carrot and pepper relish and cover the bottom of the bread.
Layer meat and pimento cheese alternately with the last layer being meat.
Put the remaining carrot and pepper relish on top.
Wrap sandwiches in plastic wrap and place a heavy skillet or cookbook on top and let sandwiches rest for 1 hour.
Slice and serve!!
