Instructions
Sweat onions to slightly brown in a pan over medium heat.
Remove onions and place shaved beef in pan.
Season with salt & pepper and cook beef (cover to help the beef cook through).
Strain beef to remove oil and let it cool.
Remove eggroll wrapper 1 at a time; add 1 tbsp of pimento cheese and 1 tbsp of beef.
Turn wrapper so its pointed ends face you; using a kitchen brush spread egg around the entire edge of the wrapper.
Tuck the two outer edges in to form an envelope and roll to meet the other edge pointing north.
Fry eggrolls at 350° until golden brown and serve with Saigon sauce!
