Preheat oven to 400°.
Line two baking sheets with parchment paper.
In a medium saucepan, heat water, milk, salt and butter over medium heat until the mix comes to a boil then reduce the heat to low.
Add in flour, stir the flour in until its completely incorporated and the mixture pulls away from the sides of the pan.
Let it cool for about a minute before adding eggs, one at a time, mix well after each egg.
Add ground pepper & all but 2 Tsp of bacon and diced jalapeno.
Add pimento cheese and mix well.
Use a Tbsp cookie scooper or pastry bag to place small mounds of the mixture onto prepared cookie sheet, keeping them about 2 inches apart.
Sprinkle with leftover bacon.
Bake for 15-20 minutes or until they're golden brown.
Cool on pan for about 1 minute then remove & enjoy!!
