Preheat the oven to 400°.
Place the Cauliflower slices on a lined baking tray & drizzle with oil.
Season with salt and pepper, and place in the oven for around 20 minutes.
When fairly soft and slightly crispy around the edges.
Turn over and cook an additional 10 minutes.
Remove from the oven.
Spread ¼ of Pimento Cheese on each piece of Cauliflower.
Add a couple of slices of tomato to each piece of Cauliflower, then add the grated cheese & fried chopped bacon.
Place back in the oven for 5 minutes until the cheese is fully melted and/or slightly crispy.
Serve topped with fresh basil if desired.
